Mangia Monday

 I've been working on doing something with the buckets of cucumbers that have come out of my garden. I'm picking twenty plus cucumbers every three days.  This is last Friday's picking...


I canned four quarts of dill pickles. I would have done more but that's all the lids I had.  They have to sit for two weeks before we can try them out. And by "we" I mean anyone but me because I do not like dill pickles... at all... not even a little bit.

I have found some interesting recipes using cucumbers to make a quick bread, cookies and cake.  You use the cucumbers much like you would use zucchini, the only difference is that you have to squeeze the excess liquid out of the cucumbers.  The next couple of days will be stormy so it will be a good time to fire up the oven and try a couple of the recipes out.

I've been seeing rice bowls a lot lately, so I decided to try making some for dinner one night.  This one has rice in the bottom, fresh corn and tomatoes, red leaf lettuce, cubed chicken, salsa and grated cheddar cheese. It was pretty good... kind of like a deconstructed fajita.  


Believe it or not this is our first hot dog dinner of the summer...


This is the peach jam that I got from Misfits Market. I put it on sunflower seed toast. Quite tasty!
